Polenta and Meatballs

Prepare the Polenta
In a large pot, bring the water and salt to a boil. Slowly whisk in the polenta, reduce heat to low, and cook, stirring frequently, for about 30 minutes until thickened. Remove from heat and set aside.

Make the Meatballs
In a bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, minced garlic, and chopped basil. Season with salt and pepper to taste. Mix until just combined and form into meatballs about 1 inch in diameter.

Cook the Meatballs
In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 10-12 minutes. Transfer to a plate.

Combine and Serve
In the same skillet, add the marinara sauce and meatballs. Simmer for about 10 minutes. Serve the meatballs over a bed of polenta and garnish with additional fresh basil if desired.
