Cooking Instructions

  1. 1

    Prepare the Orzo

In a pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.

  2. 2

    Sauté Asparagus and Cherry Tomatoes

In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the asparagus and cherry tomatoes, then season with salt and pepper. Sauté for about 5-7 minutes until tender. Remove from the skillet and set aside.

  3. 3

    Cook the Halibut

In the same skillet, add the remaining 2 tbsp of olive oil. Season the halibut fillets with salt and pepper. Place the fillets in the skillet and cook for about 4-5 minutes per side, or until golden brown and cooked through.

  4. 4

    Combine Orzo and Pesto

In a large bowl, combine the cooked orzo with pesto, stirring until well coated.

  5. 5

    Serve

Plate the pesto orzo, top with the sautéed asparagus and cherry tomatoes, and place the pan-seared halibut on the side. Drizzle with chimichurri if desired.
