Make the Cognac Dijon Sauce
In the same skillet used for the steak, reduce heat to medium and add cognac. Allow it to reduce for 1-2 minutes, then stir in Dijon mustard until well combined. Remove from heat and set aside.

Prepare the Polenta
In a saucepan, bring vegetable broth to a boil. Gradually whisk in the polenta, reducing heat to low. Cook for 5-7 minutes, stirring frequently, until thickened. Stir in Parmesan cheese and butter until melted and creamy.

Assemble the Dish
Slice the rested steak and place it on a plate. Drizzle with the cognac dijon sauce, and serve alongside the creamy polenta and sautéed Brussels sprouts.
