    Prepare the Steak

    Season the New York strip steak with salt and black pepper on both sides. In a skillet, heat olive oil over medium-high heat and sear the steak for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from skillet and let it rest.

    Make the Cognac Dijon Sauce

    In the same skillet used for the steak, reduce heat to medium and add cognac. Allow it to reduce for 1-2 minutes, then stir in Dijon mustard until well combined. Remove from heat and set aside.

    Prepare the Polenta

    In a saucepan, bring vegetable broth to a boil. Gradually whisk in the polenta, reducing heat to low. Cook for 5-7 minutes, stirring frequently, until thickened. Stir in Parmesan cheese and butter until melted and creamy.

    Cook the Brussels Sprouts

    Trim and halve the Brussels sprouts. In another skillet, heat a little olive oil over medium heat. Sauté the Brussels sprouts for about 8-10 minutes, or until tender and caramelized. Season with salt and pepper to taste.

    Assemble the Dish

    Slice the rested steak and place it on a plate. Drizzle with the cognac dijon sauce, and serve alongside the creamy polenta and sautéed Brussels sprouts.
