Preparation and Cooking

    Prepare the Meatloaf

    Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, Italian sausage, diced portabella mushrooms, breadcrumbs, eggs, chopped onion, minced garlic, salt, and black pepper. Mix until well combined.

    Form and Bake the Meatloaf

    Shape the mixture into a loaf and place it in a baking dish. Pour the prepared mushroom ragout over the top. Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (70°C).

    Make the Red Potato Mash

    While the meatloaf is baking, boil the cubed red potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste.

    Sauté the Seasonal Squash

    In a skillet, heat olive oil over medium heat. Add diced seasonal squash and sauté for about 5-7 minutes, or until tender. Season with salt and pepper to taste.

    Serve

    Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve slices of meatloaf with red potato mash and sautéed squash on the side, drizzled with additional mushroom ragout if desired.
