Preparation and Smoking

    Marinate the Duck

    In a bowl, mix together soy sauce, honey, minced garlic, grated ginger, black pepper, and salt. Rub the marinade all over the duck, making sure to get it inside the cavity. Let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Prepare the Smoker

    Soak hickory wood chips in water for at least 30 minutes. Prepare your smoker according to the manufacturer's instructions, and preheat to 225°F (107°C).

    Smoke the Duck

    Remove the duck from the marinade and pat it dry with paper towels. Rub the outside with olive oil. Place the duck breast side up on the smoker rack. Add the soaked hickory wood chips to the smoker box or directly onto the coals.

    Cooking Time

    Smoke the duck for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally with leftover marinade for added flavor.

    Rest and Serve

    Once cooked, remove the duck from the smoker and let it rest for 15 minutes before carving. Serve with your favorite sides.
