    Prepare the Tri-Tip

    Rub the herb and garlic paste all over the tri-tip roast. Let it sit at room temperature for about 30 minutes to allow the flavors to penetrate.

    Roast the Tri-Tip

    Place the tri-tip in a roasting pan and roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Adjust time for desired doneness.

    Make the Mashed Potatoes

    While the tri-tip is roasting, prepare the mashed potatoes. Boil peeled and chopped potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper to taste.

    Cook the Asparagus

    In the last 10 minutes of the tri-tip roasting, toss the asparagus with olive oil, salt, and pepper, and place them on a baking sheet. Roast alongside the tri-tip until tender.

    Rest and Serve

    Once the tri-tip is done, remove it from the oven and let it rest for 10 minutes. Slice against the grain and serve alongside mashed potatoes and roasted asparagus.
