Lamb Chops

    Marinate the Lamb Chops

    In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Add the lamb chops, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour.

    Grill the Lamb Chops

    Preheat the grill to medium-high heat. Remove the lamb chops from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let them rest before serving.

Lamb Bourguignon

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Add the cubed lamb shoulder and brown on all sides. Remove from the pot and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion, carrots, and minced garlic. Sauté until the onions are translucent.

    Combine and Simmer

    Return the lamb to the pot, then add red wine, beef broth, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours until the lamb is tender.

Mint Yogurt

    Prepare the Mint Yogurt

    In a small bowl, combine Greek yogurt, chopped mint, lemon juice, minced garlic, and salt. Mix well and adjust seasoning to taste. Refrigerate until ready to serve.
