    Prepare the Asparagus

    Trim the ends off the asparagus and blanch in boiling salted water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

    Cook the Filet Mignon

    Season the filet mignon steaks with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the steaks for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Make the Black Garlic Béarnaise

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add egg yolks and white wine vinegar, whisking constantly until the mixture thickens. Stir in minced black garlic and tarragon. Gradually whisk in the remaining butter until smooth.

    Prepare the White Truffle Mash

    In a bowl, mix the mashed potatoes with white truffle oil until well combined. Season with salt to taste.

    Plate the Dish

    On each plate, place a generous scoop of white truffle mash, top with the filet mignon, drizzle with black garlic béarnaise, and arrange the asparagus on the side.
