    Prepare the Duck Breast

    Score the skin of the duck breasts in a crisscross pattern. Season both sides with salt and pepper.

    Sear the Duck

    Heat olive oil in a skillet over medium heat. Place duck breasts skin-side down and cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes until medium-rare. Remove from skillet and let rest.

    Make the Orange Glaze

    In the same skillet, add orange juice and honey. Bring to a simmer and reduce until thickened, about 5-7 minutes.

    Prepare the Hash

    In another pan, melt 1 tablespoon of butter over medium heat. Add diced apple and sausage slices, cooking until the sausage is browned and apples are tender, about 5-7 minutes.

    Cook the Brussels Sprouts

    In the same pan, add halved Brussels sprouts and the remaining tablespoon of butter. Sauté until they are tender and slightly caramelized, about 8-10 minutes.

    Serve

    Slice the duck breast and arrange on a plate. Top with orange glaze and serve with apple and sausage hash and Brussels sprouts on the side.
