Marinate the Onions
Thinly slice the red onion and place it in a bowl. Add 1 tablespoon of olive oil, 1 tablespoon of red wine vinegar, and a pinch of salt. Toss well to combine, then let it sit for at least 30 minutes to marinate.

Infuse the Grapes
In a separate bowl, combine the seedless grapes and champagne. Allow the grapes to soak for about 30 minutes to absorb the champagne flavor.

Make the Vinaigrette
In a small bowl, whisk together the remaining olive oil, red wine vinegar, honey, salt, and black pepper until well combined.

In a large bowl, add the fresh spinach. Drain the marinated onions and sprinkle them over the spinach. Add the champagne-infused grapes and crumbled goat cheese. Drizzle the vinaigrette over the top and toss gently to combine.
