    Prepare the Chicken

    Preheat a grill or skillet over medium-high heat. Rub the chicken breasts with olive oil and coat them with Cajun seasoning on both sides.

    Cook the Chicken

    Place the seasoned chicken on the grill or skillet and cook for about 6-7 minutes per side, or until fully cooked and blackened. Remove from heat and let rest for a few minutes before slicing.

    Prepare the Baguette

    While the chicken is resting, slice the French baguette lengthwise and toast it lightly if desired.

    Assemble the Po’Boy

    Spread a generous amount of Creole aioli on both sides of the baguette. Layer on the sliced chicken, provolone cheese, green chilies, tomato slices, and lettuce.

    Serve

    Close the sandwich, cut it in half, and serve with house-made kettle chips on the side.
