Prepare the Beef
Wrap the beef tenderloin tightly in plastic wrap and freeze for about 1 hour until firm. Once firm, slice the beef as thinly as possible using a sharp knife.

Make the Lemon Caper Relish
In a small bowl, combine the lemon juice, capers, and finely chopped shallot. Mix well and drizzle with olive oil. Season with salt and black pepper to taste.

Prepare the Duck Rind
Fry the duck rind in a pan over medium heat until crispy. Remove and drain on paper towels.

Assemble the Carpaccio
On a chilled plate, arrange the thin slices of beef in a single layer. Use a microplane or grater to shave the cured egg yolks over the beef. Spoon the lemon caper relish over the top.

Garnish and Serve
Top with crispy duck rind and additional olive oil if desired. Serve immediately.
