Prepare Brisket

Check & Warm

If the smoked brisket is refrigerated, let it sit at room temperature for 10–15 minutes to take the chill off. This improves texture and flavor.

Preheat a heavy skillet or cast-iron pan over medium heat for 2–3 minutes until hot but not smoking.

If brisket slices are thick or you prefer them warmed through, arrange the 1/2 lb hand-sliced brisket in a single layer in the skillet (allow overlap if needed). Warm for 1–2 minutes per side until heated through and edges render slightly. Do not overcook — brisket is already smoked; you are only reheating and rendering a bit of fat for flavor.

If you want the meat moister, sprinkle up to 1 teaspoon pickle juice over the slices in the skillet while heating, then cover briefly (30–45 seconds) to steam and finish warming.

Toast Bread

While brisket warms, spread 1 tablespoon unsalted butter evenly on the outside of each rye slice if toasting in a pan. Alternatively, leave bread untoasted if preferred.

Place bread, buttered-side down, in a separate skillet over medium heat (or use the same pan after removing brisket). Toast 1–1.5 minutes per side until golden and crisp. Remove and keep warm.

Assemble Sandwich

Spread 1 tablespoon yellow mustard evenly on the inside face of one toasted rye slice and 1 tablespoon on the other slice (adjust to taste). If guest prefers hotter condiments, offer hot mustard or horseradish on the side.

Arrange the warmed smoked brisket slices evenly on one mustard-coated slice of rye. Pile the meat so it covers the bread; use the full 1/2 lb for a generous sandwich.

Sprinkle a light dusting (about 1/4 tsp) of coarse ground black pepper over the brisket if desired.

Place the second rye slice, mustard side down, on top to complete the sandwich. Press gently to compact.

Serve

Cut the sandwich in half on the diagonal or down the middle, as preferred.

Serve immediately with the whole dill pickle spear on the side. If desired, provide a small ramekin of extra yellow or hot mustard for dipping.
