Cook potatoes

Place whole or halved baby potatoes in a medium pot and cover with cold water by 1 inch. Add 1/2 teaspoon kosher salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are tender when pierced with a fork, about 12–15 minutes depending on size. Do not overcook — they should be fork-tender but hold shape.

Cool and quarter

Drain the potatoes in a colander and let them steam-dry for 2 minutes. While still warm, cut larger potatoes into quarters and smaller ones in halves so pieces are roughly bite-sized (about 3/4–1 inch pieces). Transfer to a large mixing bowl.

Prepare kale

Tear kale leaves from stems and slice into thin ribbons. Place sliced kale in a second large bowl. Sprinkle with 1/4 teaspoon kosher salt and massage with clean hands for 1–2 minutes until leaves soften and darken. This removes bitterness and softens texture.

Combine vegetables

Add the thinly sliced red onion, sliced celery, and chopped parsley to the bowl with the warm potatoes. While potatoes are still warm, spoon 1–2 tablespoons of the dressing over them (see Dressing section) and gently toss to coat. This helps potatoes absorb flavor.

Assemble salad

Add the dressed warm potato mixture to the massaged kale. Pour the remaining dressing over the combined salad and toss gently until kale and potatoes are evenly coated. Taste and season with remaining 1/2 teaspoon kosher salt (or to taste) and 1/2 teaspoon freshly ground black pepper. If using capers or cheese, fold them in now.

In a small bowl or jar, combine 3 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon honey or maple syrup, 1 teaspoon red wine vinegar, and the minced garlic. Whisk (or shake in a jar with a lid) vigorously until emulsified and slightly thickened. Taste and adjust acidity or sweetness — add a pinch more salt if needed.

Sprinkle toasted sunflower seeds or chopped walnuts over the salad for crunch. If using, crumble feta or shave Parmesan on top. Finish with a light drizzle of extra olive oil if desired and a final crack of black pepper. Serve immediately while potatoes are slightly warm, or chill for 30 minutes for a more melded flavor.
