Prepare buns

Split the burger buns and spread about 1/2 teaspoon butter on each cut side (reserve remaining butter). Heat a large skillet or griddle over medium heat. Place buns cut-side down on the dry skillet and toast until golden and slightly crisp, 1–2 minutes. Remove and keep warm.

Cook peameal bacon

Wipe skillet clean if needed, add 1 teaspoon neutral oil and heat over medium. Lay the peameal bacon slices in a single layer (work in batches if needed). Cook about 3–4 minutes per side until browned and heated through. Transfer to a plate and keep warm.

Fry eggs

In the same skillet, reduce heat to medium-low and add remaining 1/2 tablespoon butter. Crack eggs into the pan (two in one batch and one in the next) and cook sunny-side up or over-easy per preference: sunny-side up about 3–4 minutes until whites are set but yolks runny; over-easy flip gently and cook 15–30 seconds more. Season eggs lightly with the measured salt and half the black pepper. Remove eggs to a plate.

Assemble sandwiches

Spread 1 teaspoon mayonnaise and 1 teaspoon mustard on each bottom bun. Place a lettuce leaf (if using) on each bottom bun, then two peameal slices per sandwich (for the one with single egg, use three slices as desired), top with two cheddar slices (one on top of peameal so it starts melting). Place a fried egg on top of the cheese, finish with tomato slices, remaining mustard if desired, then crown with the toasted top bun.

Melt cheese (optional step)

If you want the cheddar extra melty, after assembling the bottom half with peameal and cheese, place the open sandwich briefly under a broiler or cover the skillet with a lid for 30–60 seconds until cheese softens before adding the egg and tomato.

Season and serve

Sprinkle remaining black pepper over the eggs, cut sandwiches in half if desired, and serve immediately while hot.

Use the same skillet for cooking the components to build flavor; wipe any excessive char between steps. Nonstick spray may be used at the start to prevent sticking if your pan requires it.
