Crust Preparation

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the cold, unsalted butter cut into small cubes. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Do not overwork the dough. Shape it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to fit your tartlet pans. Press the dough into the pans and trim any excess. Poke the bottom with a fork to prevent bubbling.

Filling Preparation

    Prepare the Goat Cheese

    In a small bowl, crumble the goat cheese and mix it with half of the fresh basil leaves, chopped. This will add flavor to the filling.

    Assemble the Tartlets

    Spread the goat cheese mixture evenly across the bottom of each crust. Arrange the thinly sliced tomatoes on top of the cheese mixture.

    Season the Filling

    Drizzle the olive oil and balsamic vinegar over the tomatoes. Sprinkle with salt and black pepper to taste.

Baking

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Bake the Tartlets

    Place the assembled tartlets in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the tomatoes are slightly roasted.

    Garnish and Serve

    Remove the tartlets from the oven and let them cool slightly. Garnish with the remaining fresh basil leaves before serving.
