Sweet Potato Croquettes

    Prepare the Sweet Potatoes

    Peel and chop the sweet potatoes into chunks. Place them in a pot of boiling salted water and cook until tender, about 15-20 minutes. Drain and let cool.

    Mash the Sweet Potatoes

    Once cooled, mash the sweet potatoes in a large bowl until smooth. Add the egg, flour, garlic powder, salt, and black pepper. Mix until combined.

    Form the Croquettes

    Chop the green onions and fold them into the sweet potato mixture. Shape the mixture into small balls or patties, about 2 inches in diameter.

    Coat the Croquettes

    Place the breadcrumbs in a shallow dish. Roll each croquette in the breadcrumbs until fully coated.

    Cook the Croquettes

    Heat olive oil in a large skillet over medium heat. Add the croquettes in batches, cooking for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Miso Aioli

    In a small bowl, combine mayonnaise, white miso paste, minced garlic, lemon juice, and salt. Whisk until smooth and well combined.
