Smoked Chicken

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat dry with paper towels.

    Season the Chicken

    In a small bowl, mix together smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture all over the chicken, including under the skin.

    Add Olive Oil

    Drizzle olive oil over the seasoned chicken and rub it in to help the spices adhere.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Chicken

    Place the chicken in the smoker and add the soaked wood chips. Smoke for 3-4 hours, or until the internal temperature reaches 165°F (74°C).

    Rest the Chicken

    Remove the chicken from the smoker and let it rest for 15-20 minutes before carving.

Whipped Tahini

    Combine Ingredients

    In a food processor, combine tahini, lemon juice, minced garlic, and salt.

    Blend

    Blend until smooth. You may need to scrape down the sides of the bowl.

    Add Water

    With the processor running, slowly add water until the mixture is creamy and smooth.

    Finish with Olive Oil

    Drizzle in olive oil and blend until well incorporated. Adjust salt to taste.

Wild Leek Tabbouleh

    Prepare Bulgur

    In a medium bowl, combine bulgur wheat and water. Let it soak for 30 minutes, or until the bulgur is tender.

    Fluff Bulgur

    Fluff the soaked bulgur with a fork to separate the grains.

    Mix Ingredients

    Add chopped wild leeks, diced tomato, diced cucumber, and chopped parsley to the bulgur.

    Dress the Tabbouleh

    Drizzle lemon juice and olive oil over the mixture. Season with salt to taste.

    Toss and Serve

    Gently toss all the ingredients together and serve immediately or let it chill in the refrigerator for 30 minutes for the flavors to meld.
