Ceviche Preparation

    Prepare the Scallops

    Rinse the fresh scallops under cold water and pat them dry with a paper towel. Slice them into thin rounds and place them in a glass bowl.

    Prepare the Grapefruit

    Cut the grapefruit in half and carefully segment the fruit, removing any seeds. Squeeze the juice from the remaining halves into the bowl with the scallops.

    Add Radishes and Mint

    Thinly slice the radishes and add them to the bowl. Chop the fresh mint leaves and sprinkle them in as well.

    Mix and Marinate

    Gently toss all the ingredients in the bowl to combine. Cover with plastic wrap and let it marinate in the refrigerator for 30 minutes.

Chili Aioli Preparation

    Combine Aioli Ingredients

    In a small mixing bowl, whisk together the mayonnaise, chili powder, minced garlic, lemon juice, salt, and pepper until smooth and well combined.

    Adjust Seasoning

    Taste the aioli and adjust seasoning with more salt, pepper, or lemon juice as needed. Set aside in the refrigerator until ready to serve.

Serving

    Plate the Ceviche

    After marinating, remove the ceviche from the refrigerator and gently toss again. Use a spoon to plate a portion of the ceviche on a serving dish.

    Serve with Crackers

    Arrange the crackers around the ceviche on the plate. Serve with a generous dollop of the chili aioli on the side.
