Preparing Puff Pastry

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Cut the cold butter into small cubes and add to the flour mixture. Using a pastry cutter or fingers, blend until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, mixing until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll and Fold

    On a floured surface, roll out the dough into a rectangle. Fold the dough into thirds like a letter, roll out again, and repeat this process 3 more times to create layers. Refrigerate for another 30 minutes.

Preparing Sweet Pastry Filling

    Mix the Filling

    In a mixing bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the fresh berries gently.

    Mix the Filling

    In a bowl, combine cooked spinach, crumbled feta cheese, beaten eggs, and black pepper. Mix well until all ingredients are combined.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Cut and Fill Pastry

    Roll out the puff pastry to about 1/4 inch thick. Cut into squares or circles. Place a tablespoon of sweet filling or savory filling into the center of each piece.

    Fold the pastry over the filling to create a pocket. Seal the edges by pressing with a fork or pinching with your fingers.

    Place the filled pastries on the prepared baking sheet. Bake for 15-20 minutes or until golden brown and puffed up.
