Cooking Pasta

    Boil Water

    In a large pot, bring water to a boil. Add a pinch of salt.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally.

    Drain Pasta

    Once cooked, reserve 1 cup of pasta water, then drain the pasta and set aside.

Preparing Vegetables

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned.

    Add Vegetables

    Add the bell peppers, zucchini, carrots, broccoli, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Spinach

    Stir in the spinach leaves and cook for an additional 1-2 minutes until wilted.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the cooked vegetables.

    Add Seasoning

    Pour in the reserved pasta water, salt, and black pepper. Toss everything together to combine.

    Finish with Cheese and Basil

    Remove from heat, stir in the grated Parmesan cheese and chopped basil. Toss until well mixed.

Serving

    Plate and Serve

    Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.
