Method

Pancake Preparation

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In a separate bowl, whisk together the milk, large egg, and vanilla extract until smooth. Then, add the melted butter and whisk until combined.

  3. 3

    Combine Wet and Dry Mixtures

Pour the wet mixture into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Do not overmix; a few lumps are fine.

  4. 4

    Preheat the Griddle

Heat a non-stick griddle or skillet over medium heat. Lightly grease it with a little bit of butter or oil.

  5. 5

    Cook the Pancakes

Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more.

  6. 6

    Keep Warm

Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.

Serving

  1. 7

    Plate and Serve

Stack the pancakes on individual plates. Top each stack with a generous pat of sea salt butter and drizzle with local maple syrup. Serve immediately.
