Method

Preparation

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until the mixture is smooth and fully combined.

Cooking

  1. 3

    Combine Mixtures

Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture using a spatula until just combined. Be careful not to overmix; a few lumps are okay.

  2. 4

    Heat the Pan

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

  3. 5

    Cook the Pancakes

Pour about 1/4 cup of batter onto the heated skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 2 minutes, or until golden brown.

  4. 6

    Serve

Serve pancakes warm with maple syrup drizzled on top and a generous handful of fresh berries.
