Method
Preparing the Mignonette Sauce

Chop Shallots
Finely chop the shallots and place them in a small bowl.

Mix Ingredients
Add the red wine vinegar and black peppercorns to the bowl with chopped shallots. Mix well.

Refrigerate
Cover the mignonette sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Preparing the Oysters

Shuck Oysters
Using an oyster knife, carefully shuck the oysters, being cautious of the sharp edges.

Plate Oysters
Place the shucked oysters on a serving platter, ideally over a bed of crushed ice.
Serving

Add Condiments
On each oyster, add a dollop of prepared horseradish and a splash of hot sauce according to your taste.

Serve with Mignonette
Serve the oysters immediately with the mignonette sauce on the side for dipping.
