Prepare Tostada Base

Fry the Tortillas
In a large skillet, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the corn tortillas one at a time. Fry each tortilla for about 1-2 minutes on each side until they are golden and crispy. Remove and place on paper towels to drain excess oil.

Prepare the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Gradually add water to create a smooth batter.

Fry Mushrooms
Dip each oyster mushroom into the batter, allowing excess to drip off. In a frying pan, heat vegetable oil over medium heat. Fry the battered mushrooms in batches until golden brown and crispy, about 4-5 minutes. Remove and place on a paper towel to drain.
Make Romesco Sauce

Blend the Ingredients
In a blender, combine roasted red peppers, almonds, garlic cloves, olive oil, red wine vinegar, smoked paprika, and salt to taste. Blend until smooth and adjust seasoning as necessary.
Crispy Garlic

Fry the Garlic
Thinly slice the garlic cloves. In a small frying pan, heat vegetable oil over medium heat. Add the sliced garlic and fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
