Pastry Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine 4 cups of all-purpose flour and 1 teaspoon of salt. Mix thoroughly.

Cut in Butter
Cut 1 cup of unsalted butter into the flour mixture using a pastry cutter or two forks until the mixture resembles coarse crumbs.

Add Water
Slowly add 0.5 cups of cold water to the mixture, one tablespoon at a time, mixing until the dough forms a ball. Do not overwork the dough.

Chill Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Filling Preparation

Prepare Cream Cheese Filling
In a mixing bowl, blend 8 ounces of cream cheese with 0.5 cups of powdered sugar and 1 teaspoon of vanilla extract until smooth and creamy.

Prepare Fruit Filling
Wash and slice the fresh fruits as desired, ensuring they are ready for filling.

Prepare Chocolate Filling
Measure out 1 cup of chocolate chips and set aside for filling.
Assembly and Baking

Preheat Oven
Preheat your oven to 375°F (190°C).

Roll Out Dough
On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.

Cut Pastry Shapes
Using a round cutter, cut out circles from the dough. You will need enough circles to make at least 50 mini pastries.

Fill Pastries
Place a small dollop of each filling (cream cheese, fruit, or chocolate) in the center of half of the pastry circles. Top with another pastry circle and pinch the edges to seal.

Prepare Egg Wash
In a small bowl, beat 1 egg with 1 tablespoon of milk. Brush the egg wash over the tops of the filled pastries.

Bake Pastries
Place the pastries on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.

Cool and Serve
Remove the pastries from the oven and let them cool on a wire rack before serving.
