Method

Hummus

  1. 1

    Blend Ingredients

In a food processor, combine cooked chickpeas, tahini, garlic, lemon juice, olive oil, salt, water, and ground cumin. Blend until smooth.

  2. 2

    Adjust Consistency

If the hummus is too thick, add a bit more water until desired consistency is reached.

Moroccan Eggplant

  1. 3

    Prepare Eggplant

Preheat the oven to 400°F (200°C). Cut the eggplant into cubes and place in a bowl.

  2. 4

    Season and Roast

Drizzle with olive oil, ground coriander, ground cumin, smoked paprika, and salt. Toss to coat and spread evenly on a baking sheet. Roast for 25-30 minutes until tender and golden.

  3. 5

    Garnish

Once cooked, remove from oven and sprinkle with chopped fresh cilantro.

Crispy Chickpeas

  1. 6

    Prepare Chickpeas

Preheat the oven to 400°F (200°C). Rinse and drain cooked chickpeas, then pat dry with paper towels.

  2. 7

    Season and Bake

Toss chickpeas with olive oil, salt, ground cumin, and paprika. Spread on a baking sheet in a single layer and bake for 20-25 minutes until crispy, shaking the pan halfway through.

Laffa Bread

  1. 8

    Prepare Dough

In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy. In a separate bowl, mix all-purpose flour and salt.

  2. 9

    Knead and Rise

Add the yeast mixture and olive oil to the flour. Mix, then knead for about 5-7 minutes until smooth. Cover and let it rise for 1 hour or until doubled in size.

  3. 10

    Shape and Cook

Divide the dough into equal pieces and roll each into a flat oval. Cook on a preheated skillet over medium heat for about 2-3 minutes on each side until golden and puffed.

Saffron

  1. 11

    Infuse Saffron

In a small bowl, steep saffron threads in hot water for about 10 minutes to release flavor and color.
