    Prepare the Marinade

    In a medium bowl, combine coconut milk, red curry paste, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and salt. Whisk until all ingredients are well combined and the mixture is smooth.

    Marinate the Chicken

    Place the chicken strips in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Grilling

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, allow coals to burn down until covered with white ash.

    Skewer the Chicken

    Remove the chicken from the marinade and thread the strips onto the soaked skewers. Discard any leftover marinade.

    Grill the Chicken

    Place the skewers on the grill. Grill for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

    Serve

    Remove the skewers from the grill and let them rest for a few minutes before serving. Serve with your choice of dipping sauce, such as peanut sauce or a lime wedge.
