Hummus Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. Reserve half for the crispy chickpeas topping.

    Blend the Hummus

    In a food processor, combine the reserved chickpeas, tahini, olive oil, lemon juice, garlic cloves (minced), ground cumin, salt, and water. Blend until smooth, adding more water if needed to reach desired consistency.

    Prepare the Chickpeas

    Preheat the oven to 400°F (200°C). Rinse and drain the reserved chickpeas from the hummus preparation.

    Season and Bake

    Toss the drained chickpeas with olive oil, paprika, and salt. Spread them on a baking sheet in a single layer and bake for 25-30 minutes until crispy, stirring occasionally.

Pickled Vegetables Preparation

    Prepare the Brine

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring to dissolve the sugar and salt.

    Pickle the Vegetables

    Place chopped carrots, cucumbers, and red onion in a jar. Pour the hot brine over the vegetables, ensuring they are fully submerged. Let cool to room temperature, then refrigerate for at least 1 hour before serving.

Serving

    Assemble the Dish

    Serve the hummus in a bowl topped with crispy chickpeas and alongside the pickled vegetables. Arrange crackers on the side for dipping.
