Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, cayenne pepper, garlic powder, onion powder, and paprika. Add the chicken thighs and coat them well. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Frying Station

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Dredge the Chicken

Remove the chicken from the marinate and let the excess liquid drip off. In a shallow dish, place the flour and season it with salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Dredge each piece of chicken in the flour mixture, ensuring it is fully coated.

  4. 4

    Fry the Chicken

Carefully place the dredged chicken thighs into the hot oil. Fry for about 10-12 minutes on each side or until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove the chicken and place it on a wire rack to drain excess oil.

Waffles

  1. 5

    Preheat the Waffle Iron

Preheat your waffle iron according to the manufacturer's instructions.

  2. 6

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and sugar.

  3. 7

    Combine Wet Ingredients

In another bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract until well combined.

  4. 8

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.

  5. 9

    Cook the Waffles

Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions, usually for about 4-5 minutes, until golden brown.

Chili Maple Syrup

  1. 10

    Prepare the Syrup

In a small saucepan, combine the maple syrup, red chili flakes, and lime juice. Heat over low heat for about 5 minutes until warmed through and the flavors meld.
