Cupcake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the eggs, milk, olive oil, vanilla extract, grated ginger, and molasses until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

    Add Chocolate Chips

    Fold in the chocolate chips gently into the batter.

    Fill the Cupcake Liners

    Using a scoop or spoon, fill the cupcake liners about 2/3 full with the batter.

    Bake

    Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

    Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

    In a mixing bowl, beat the softened butter with an electric mixer until creamy.

    Add Powdered Ingredients

    Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.

    Adjust Consistency

    Add the milk and vanilla extract, and beat on medium-high speed until the frosting is light and fluffy. If it's too thick, add a little more milk.

    Frost the Cupcakes

    Once the cupcakes are completely cool, frost them with the prepared chocolate frosting using a spatula or piping bag.
