Crispy Coconut Shrimp

Prepare the Shrimp
In a large bowl, season the shrimp with salt, black pepper, and cayenne pepper. Toss to coat the shrimp evenly.

Set Up Breading Station
Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.

Bread the Shrimp
Dip each shrimp first into the flour, shaking off excess, then into the beaten eggs, and finally coat with the coconut-panko mixture, pressing gently to adhere.

Heat Oil
In a large skillet, heat the oil over medium-high heat until hot but not smoking.

Fry the Shrimp
Working in batches, fry the shrimp for 2-3 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Pineapple Salsa

Combine Ingredients
In a medium bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, and cilantro.

Add Lime Juice and Salt
Drizzle lime juice over the mixture and sprinkle with salt. Toss gently to combine.

Let the salsa sit for at least 15 minutes to allow the flavors to meld before serving.
