Cauliflower Bites

Prepare the Cauliflower
Preheat your oven to 400°F (200°C). Cut the cauliflower into bite-sized florets.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, and salt. Gradually whisk in the water until the batter is smooth and well-combined.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it's fully coated. Allow any excess batter to drip off.

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cauliflower
Carefully add the coated cauliflower florets to the hot oil in batches. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Soak the Cashews
In a bowl, soak the raw cashews in water for at least 2 hours or overnight to soften.

Blend the Sauce
Drain and rinse the soaked cashews. In a blender, combine the cashews, 1 cup of fresh water, sriracha sauce, lime juice, garlic clove, and salt. Blend until smooth and creamy.

Taste and Adjust
Taste the sauce and adjust the seasoning by adding more salt or sriracha as desired for extra heat.
