Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place it over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Beat the Eggs
In a separate bowl, whisk the large eggs and granulated sugar together until the mixture is pale and fluffy.

Combine Mixtures
Gradually fold the melted chocolate mixture into the egg mixture, adding the vanilla extract as you fold. Be gentle to maintain the airiness of the mixture.

Whip the Cream
In another bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the chocolate mixture until fully combined.

Chill the Mousse
Spoon the mousse into individual serving cups or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Prepare Whipped Cream
In a bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until stiff peaks form.

Once the mousse is set, remove it from the fridge and top each serving with a generous dollop of whipped cream before serving.
