Preparing the Cake Batter

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Whisk Eggs and Sugar

    In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and thick, about 2-3 minutes.

    Combine Mixtures

    Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to combine. Add the vanilla extract and a pinch of salt, mixing well.

    Add Flour

    Sift the all-purpose flour over the chocolate mixture and gently fold it in until just combined. Be careful not to overmix.

Baking the Cakes

    Prepare Ramekins

    Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving the Cake

    Cool and Serve

    Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cake, then invert onto plates. Serve immediately with scoops of vanilla ice cream.
