Budino Preparation

Combine Ingredients
In a medium saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved.

Mix Dry Ingredients
In a separate bowl, whisk together the cocoa powder, cornstarch, and salt until well combined.

Temper Egg Yolks
In a small bowl, beat the egg yolks. Slowly add a small amount of the warm cream mixture to the yolks, whisking constantly to temper them.

Thicken the Mixture
Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble. This should take around 5-7 minutes.

Chill Budino
Once thickened, remove from heat and pour the budino into individual serving cups. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Prepare Caramel
In a saucepan, combine the granulated sugar and water. Cook over medium heat without stirring until the mixture turns a deep amber color, about 8-10 minutes.

Add Cream and Butter
Once the caramel reaches the desired color, carefully add the heavy cream and butter. The mixture will bubble vigorously, so be cautious. Stir until smooth.

Finish Sauce
Stir in the sea salt and let the caramel cool slightly before using.

Whip Cream
In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract.

Beat Until Stiff Peaks
Using a hand mixer or stand mixer, beat the mixture on medium-high speed until stiff peaks form, about 3-5 minutes.

Once the budino is set, top with whipped cream and drizzle with caramel sauce before serving.
