Chocolate Budino

    Melt the Chocolate

    In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until hot but not boiling. Remove from heat and add the dark chocolate. Stir until the chocolate is completely melted and smooth.

    Mix Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and fluffy.

    Combine Mixtures

    Gradually add the warm chocolate mixture to the egg yolk mixture, whisking constantly to avoid cooking the eggs.

    Add Cornstarch and Flavorings

    In a small bowl, whisk together the cornstarch, vanilla extract, and salt. Stir this mixture into the chocolate mixture until well combined.

    Cook the Budino

    Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and begins to bubble, about 5-7 minutes.

    Chill the Budino

    Pour the budino into individual serving cups or bowls. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

    Prepare the Caramel

    In a saucepan, combine granulated sugar and water. Stir gently to combine and bring to a boil over medium-high heat.

    Cook the Caramel

    Allow the sugar mixture to boil without stirring until it turns a deep amber color. This usually takes about 10 minutes.

    Add Cream and Butter

    Remove the saucepan from heat and carefully whisk in the heavy cream and butter. Be careful as it may bubble up. Add a pinch of salt and stir until smooth.

    Allow the caramel sauce to cool slightly before using. It will thicken as it cools.
