Preparing the Calamari

    Clean the Calamari

    If not already cleaned, rinse the calamari rings under cold water and pat them dry with paper towels.

    Prepare the Breading

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder until well combined.

    Dredge the Calamari

    Coat the calamari rings in the flour mixture, ensuring each ring is evenly covered. Shake off any excess flour.

    Heat the Oil

    In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; it should sizzle.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

Making the Marinara Sauce

    In a saucepan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant but not browned.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes, and add the dried oregano, salt, and black pepper. Stir well to combine.

    Simmer the Sauce

    Bring the sauce to a gentle simmer and cook for about 15-20 minutes, stirring occasionally. Add the fresh basil in the last few minutes of cooking.
