    Prepare the Dough

    In a large bowl, mix the flour and salt. Add the chilled butter and blend it with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

    Form the Dough

    Add cold water a tablespoon at a time, mixing until the dough holds together. Do not overwork the dough.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Shape and Bake the Shells

    Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut into circles and press into tartlet pans. Bake for 15-20 minutes or until golden brown. Let cool completely.

Beef Tartare Mixture

    Combine Ingredients

    In a mixing bowl, combine the finely diced beef, egg yolk, Dijon mustard, Worcestershire sauce, capers, and green onions.

    Add salt and black pepper to the beef mixture. Mix gently but thoroughly until all ingredients are well incorporated.

    Fold in the grated cheddar cheese until evenly distributed throughout the beef tartare mixture.

Assembly and Garnish

    Fill Tartlet Shells

    Spoon the beef tartare mixture evenly into the cooled tartlet shells.

    Top each tartlet with microgreens or fresh herbs and drizzle with extra virgin olive oil before serving.
