    Prepare broth base

    In a large pot, heat 1 cup of water over medium heat. Add the sliced ginger and smashed garlic and sauté gently for 1–2 minutes until aromatic but not browned.

    Add the low-sodium vegetable broth and optional mushroom or chicken stock to the pot. Increase heat to bring to a gentle simmer.

    Whisk the miso paste into 1/2 cup of the warm broth in a small bowl until smooth, then stir the miso mixture back into the pot. Add tamari, rice vinegar, and black pepper. Keep broth at a low simmer; avoid boiling vigorously after adding miso to preserve probiotics and flavor.

    Taste and adjust seasoning: add up to 1/4 tsp sea salt if needed, or an extra 1/2 tbs tamari for more umami.

Vegetables & Greens

    Prepare vegetables

    While the broth is simmering, bring a separate medium pot of water to a boil for the noodles. Blanch the broccoli florets and baby bok choy for 30–45 seconds in the boiling water, then transfer immediately to an ice bath to stop cooking and preserve color and nutrients. Drain and set aside.

    In a skillet over medium heat, add 1/2 tbs oil and sauté the sliced shiitake mushrooms for 3–4 minutes until tender and lightly browned. Add the julienned carrot and snow peas and sauté another 1–2 minutes so they remain crisp-tender. Remove from heat and set aside.

    Add baby spinach or mizuna to the simmering broth in the last 1 minute of cooking so they wilt gently.

Noodles

    Cook the soba noodles in the boiling pot according to package instructions (usually 4–5 minutes) until al dente. Stir gently to prevent sticking. Reserve 1/2 cup of the noodle cooking water, then drain the noodles and rinse briefly under cold water to remove excess starch and prevent overcooking. If you prefer a warm final dish, briefly dip the drained noodles back into the hot broth for 20–30 seconds before assembling.

Protein & Assembly

    Prepare tofu

    While noodles cook, heat remaining 1/2 tbs oil in a nonstick skillet over medium-high heat. Add pressed tofu cubes in a single layer and cook without moving for 2–3 minutes per side until golden and slightly crisp (about 6–8 minutes total). Sprinkle toasted sesame seeds over the tofu during the last minute.

    Divide the cooked noodles among 4 bowls (servings). Arrange blanched bok choy, broccoli, sautéed mushrooms and carrots, snow peas, and wilted spinach on top of each bowl of noodles. Add tofu cubes and sliced avocado (if using).

    Ladle the hot miso-vegetable broth over the bowls, enough to cover the noodles and vegetables. Top with sliced scallion greens, cilantro, a squeeze of lemon or lime juice, and a light drizzle of chili oil if desired.

Finishing & Serving

    Give each bowl a final grind of black pepper and taste. Adjust with small amounts of tamari, lemon/lime juice, or salt to preference. Serve immediately.

    Leftovers: keep broth and solids separate in the refrigerator up to 3 days. Reheat gently on the stove; add a splash of water if broth reduces.
