    Prepare glass

    Choose a chilled rocks glass. Pour the 0.25 oz blended Scotch into the glass, tilt and swirl to coat the inside, then discard any excess (scotch rinse). This adds a layered Scotch note that complements the Balvenie.

    Build and stir

    In a mixing glass add 2 oz Balvenie, 0.5 oz Averna, 0.25 oz demerara syrup, 2 dashes Angostura, and 1 dash orange bitters. Fill the mixing glass with large ice cubes (enough to come near the rim). Stir briskly for 20–30 seconds until well chilled and the outside of the glass is frosted. Aim for proper dilution — roughly 20–25% volume increase from the spirits.

    Strain and serve

    Using a strainer, pour the stirred mixture into the prepared rocks glass over a single large ice cube (or fresh large ice).

    Garnish

    Express the oils of an orange peel over the drink by holding the peel over the glass and giving it a quick twist (skin side down), then rub the peel around the rim and place it atop the ice as a garnish.

    Serve immediately. Provide a small stirring spoon at the table if the guest prefers to re-stir as the large ice slowly melts.
