    Prepare the Cilantro Lime Rice

    In a pot, cook 1 cup of rice according to package instructions. Once done, mix in lime juice, chopped cilantro, and a pinch of salt. Set aside.

    Cook the Asparagus

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender. Season with salt and black pepper.

    Prepare the Lemon Caper Sauce

    In a small bowl, mix together capers, lemon juice, salt, and black pepper. Set aside.

    Cook the Salmon

    In the same skillet used for asparagus, add another 2 tablespoons of olive oil. Season the salmon fillets with salt and black pepper. Cook the salmon for about 4-5 minutes on each side until cooked through and golden brown.

    Add Spinach and Tomatoes

    To the skillet with salmon, add the fresh spinach and fire roasted tomatoes. Cook until the spinach is wilted and everything is heated through.

    Plate the cilantro lime rice, top with the salmon, spinach, and tomato mixture. Drizzle with the lemon caper sauce, and garnish with green onion curls.
