    Prepare the Potatoes

    Peel and chop the redskin potatoes into uniform pieces. Boil in salted water for about 15-20 minutes, or until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add 2 tablespoons of butter, salt, and pepper. Mash until smooth and creamy. Set aside.

    Cook the Steak

    Season the sirloin steak with salt and black pepper. Heat a skillet over medium-high heat, add olive oil, and sear the steak for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

    Prepare Asparagus

    While the steak is cooking, trim the asparagus and toss with olive oil, salt, and pepper. Sear in a separate pan for about 5-7 minutes until tender and slightly charred.

    Heat Tomatoes

    In a small saucepan, heat the fire-roasted tomatoes over medium heat until warmed through.

    Plate the Dish

    On a plate, serve the mashed potatoes as a base. Place the seared steak on top, add the fire-roasted tomatoes and seared asparagus on the side. Top with crispy fried onions for garnish.
