Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring water and salt to a boil. Slowly whisk in stone ground grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in butter and cheddar cheese until melted and creamy. Set aside.

Prepare the Shrimp and Sauce

    Sauté Shrimp

    In a large skillet over medium heat, cook the diced bacon until crispy. Remove and set aside. In the same skillet, add minced garlic and diced red onion, sauté until translucent. Add shrimp, Cajun seasoning, and lemon juice, cooking until shrimp are pink and opaque, about 3-4 minutes.

    Add Tomatoes and Wine

    Stir in grape tomatoes and white wine. Cook for another 2-3 minutes until tomatoes are softened and the sauce thickens. If using, add sliced Andouille sausage and heat through.

Serve the Dish

    Plate and Garnish

    Spoon the cheesy grits onto plates, top with the shrimp mixture. Garnish with crumbled bacon, green onions, and grated Parmesan cheese before serving.
