    Prepare the Bacon

    Cook the bacon in a skillet over medium heat until crispy. Remove from skillet, drain on paper towels, and crumble into small pieces.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Oysters

    Arrange the oysters on a baking sheet. If using shucked oysters, place them back in their shells.

    Add Pesto and Bacon

    Spoon a small amount of organic pesto onto each oyster, followed by a sprinkle of crumbled bacon.

    Add Mozzarella

    Top each oyster with shredded mozzarella cheese, ensuring an even layer.

    Bake the Oysters

    Drizzle a little olive oil over the oysters and season with black pepper. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and garnish with fresh parsley. Serve immediately while hot.
