    Prepare the Hollandaise Sauce

    In a small saucepan, melt butter over low heat. In a separate bowl, whisk together egg yolks, lemon juice, and a pinch of salt. Gradually add melted butter to the egg mixture while whisking continuously until the sauce thickens. Set aside.

    Cook the Eggs

    In a non-stick skillet, heat a little oil or butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

    Toast the Croissants

    While the eggs are cooking, slice the croissants in half and toast them lightly until golden brown.

    Assemble the Benny

    On the bottom half of each toasted croissant, layer prosciutto and a cooked egg. Drizzle with hollandaise sauce and sprinkle with grated parmesan cheese. Add green onion curls on top.

    Add Smoked Salmon (Optional)

    If desired, add a portion of smoked salmon on top of the egg before adding hollandaise sauce.

    Cover with the top half of the croissant and serve immediately.
