Prepare the Filling
In a large bowl, combine the ground chicken, shredded carrots, chopped green onions, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

Fill the Wrappers
Take a potsticker wrapper and place about 1 tablespoon of the chicken mixture in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch to seal. Repeat this process until all filling is used.

Cook the Potstickers
In a large non-stick skillet, heat a tablespoon of oil over medium heat. Add the potstickers in batches and cook until the bottoms are golden brown, about 3-4 minutes. Carefully add 1/4 cup of water to the skillet, cover, and steam for an additional 5-6 minutes until cooked through.

Serve
Serve the potstickers hot, garnished with the red cabbage slaw, green onion curls, and a sprinkle of parmesan cheese.
