Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cook the Steak
Add the seasoned steaks to the hot skillet. Sear for about 4-5 minutes on one side until a crust forms, then flip.

Add Flavor
After flipping the steak, add butter, garlic cloves, and thyme to the skillet. Baste the steaks with the melted butter for an additional 4-5 minutes for medium-rare.

Rest the Steak
Remove the steaks from the skillet and let them rest on a plate for 5 minutes before slicing.
Frites Preparation

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick).

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes (First Fry)
Carefully add the potatoes in batches to the hot oil. Fry for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 2-3 minutes until golden brown and crispy. Drain on paper towels and season with salt immediately.
