1. Decarboxylate the cannabis
Preheat oven to 240°F (115°C). Break the cannabis buds into small pieces (not too fine). Spread evenly on a parchment-lined baking sheet. Bake for 30–40 minutes, gently shaking the tray every 10 minutes so heating is even. The cannabis should turn lightly golden and dry. Let cool.
2. Infuse honey with cannabis
Place the decarboxylated cannabis, honey, and coconut oil in a small heatproof jar or saucepan. Warm gently using a double boiler (simmer water, jar above water) or use a slow cooker on low. Maintain a temperature around 140–160°F (60–71°C) for 3 hours, stirring occasionally. Do not let the honey boil or exceed ~170°F. The coconut oil helps transfer cannabinoids into the honey.
3. Strain and store
After 3 hours, remove from heat and let cool slightly. Strain the honey through a fine mesh strainer or cheesecloth into a clean jar, pressing gently to extract as much infused honey as possible. Discard plant material. Seal jar and store in a cool, dark place. Label with estimated potency and date. Makes approximately 1 cup of THC-infused honey.
4. Estimated potency (approximate)
Using 7 g of cannabis at ~18% THC yields ~1260 mg THC total (7,000 mg × 0.18 = 1,260 mg). Accounting for some loss in decarb and infusion (assume 60% extraction), final infused honey contains ~756 mg THC per cup. If you use 2 tablespoons (~30 ml) of infused honey per batch of 12 servings, each serving contains ~63 mg THC. To target ~5 mg THC per serving, dilute accordingly: use 2 tsp of infused honey per serving or adjust recipe quantity. The recipe below is written to produce a concentrated infused honey; dosage adjustment is addressed in the Blueberry Lemonade directions.
Blueberry Lemonade (Per Batch ~12 servings; target 5 mg THC per serving)
5. Prepare blueberry puree
Place the blueberries and 1/2 cup of the cold water in a blender. Blend until smooth, about 30–45 seconds. If you prefer a smoother drink, strain the puree through a fine mesh sieve into a bowl, pressing with a spatula to extract the juice. Reserve the strained solids or use as garnish.
6. Sweeten and balance
In a large pitcher, combine the blueberry puree, fresh lemon juice, remaining 3.5 cups cold water, and regular honey or simple syrup. Stir to dissolve. Taste and adjust sweetness or tartness by adding more honey or lemon juice as desired.
7. Add THC-infused honey (dosing instructions)
This recipe assumes the infused honey made above is concentrated (~756 mg THC per cup). To achieve ~5 mg THC per serving for 12 servings (total ~60 mg THC), measure 1 teaspoon of the concentrated infused honey and dilute it into 3 tablespoons of regular honey or simple syrup to make a working honey containing ~5 mg per teaspoon (approximate). Alternatively: calculate the amount directly — using the estimated concentration, 1 teaspoon (~5 ml) of infused honey contains ~31.5 mg THC; to get ~5 mg per serving you want ~0.16 teaspoon of straight infused honey per serving, which is hard to measure. Safer method: create a diluted working syrup: mix 1 tablespoon (3 tbs) concentrated infused honey (~94.5 mg THC) with 6 tablespoons regular honey/simple syrup to make 7 tbs total; that yields ~13.5 mg THC per tablespoon of working syrup. From that working syrup add 1.5 teaspoons (0.5 tablespoon) to each serving (~6.75 mg THC). For a lower ~5 mg, use about 1.1 teaspoons per serving. Because potency varies, start lower and label batch clearly.
8. Incorporate infused honey into pitcher
Add the calculated amount of working (diluted) THC-honey to the pitcher and stir vigorously until fully incorporated. Chill the pitcher in the refrigerator for at least 30 minutes to meld flavors.
9. Serve
To serve, fill glasses with ice, pour lemonade, and garnish with lemon slices, a few whole blueberries, and a sprig of mint if desired. Stir each glass before drinking to ensure even distribution of honey. Remind consumers this beverage contains THC and to consume responsibly. Start with a small sip and wait at least 90–120 minutes before consuming more.
