Method
Crostini
Preheat oven to 400°F (200°C). Arrange baguette slices in a single layer on a baking sheet.
Bake in the preheated oven for 8–10 minutes, flipping once halfway, until edges are golden and crisp. Remove and let cool on a rack.
Roasted delicate squash
Reduce oven temperature to 425°F (220°C). Line a baking sheet with parchment paper.
Place halved or quartered delicate squash in a bowl. Add 2 tbs olive oil, 1 tsp fresh thyme leaves, 1 minced garlic clove, 1 tsp salt and 1/2 tsp black pepper. Toss to coat evenly.
Arrange squash pieces in a single layer, cut-side down where applicable, on the prepared baking sheet.
Roast for 18–22 minutes, until edges are caramelized and flesh is tender when pierced with a fork. If pieces are small, check at 12–15 minutes. Remove from oven and let cool slightly, then slice or chop into bite-sized pieces for topping.
Caramelized onions
While squash roasts, heat 1 tbs olive oil and 1 tbs butter in a large skillet over medium-low heat.
Sprinkle 1/2 tsp sugar (or 1/2 tsp honey) over onions to promote caramelization. Continue to cook another 10–15 minutes, stirring frequently, until deep golden brown and sweet. If desired, stir in 1 tsp red wine or balsamic vinegar at the end to deglaze the pan and add brightness. Remove from heat and keep warm.
Assembly & garnish
Spread about 1 to 1 1/2 tbs of room-temperature goat cheese on each crostini slice, covering the surface evenly.
Finish with a sprinkle of fresh thyme leaves or microgreens and, if using, a pinch of crushed pistachios or toasted walnuts for texture.
Arrange on a serving platter and serve warm or at room temperature.
